Bacon Wrapped Scallops or Shrimp with Maple Cream Glaze

  • 24 large sea scallops or jumbo shrimp
  • 12 pieces center cut bacon
  • 2 tablespoons Hall Farms Maple Cream
  • Kosher salt & pepper to taste

Cut each slice of bacon in half. Partially cook bacon under broiler. Wrap each scallop or shrimp with a slice of bacon and skewer with a toothpick to hold the bacon in place.

Brush each piece with Hall Farms Pure Maple Cream and sprinkle lightly with kosher salt & pepper.

Place on rack under broiler for about 6 to 8 minutes until bacon is cooked. Turn after 3 to 4 minutes and brush with more maple cream.

Sweet Potato and Swiss Cheese Tartlets
w/Prosciutto & Maple Cream

  • 3 cups Biscuit mix
  • 1 cup Swiss cheese, shredded
  • 2 cups sweet potatoes, mashed
  • 1 pound Prosciutto, sliced 1/4 inch thick
  • 1/2 cup Hall Farms Maple Cream plus 2 tablespoons for brushing tops
    of mini pastry shells (optional)

Grill Prosciutto "steaks" until seared. Allow to cool. Slice into 1/4 inch matchsticks and chop into small cubes. Bake sweet potatoes at 350° F until soft. Skin sweet potatoes and mash smooth. Heat Hall Farms Pure Maple Cream in microwave for about 30 seconds or until it is slightly liquid. Combine Biscuit mix, cheese, sweet potato, Prosciutto, & Maple Cream in a mixing bowl.

Mix until all ingredients are thoroughly incorporated. Let rest for 1 hour. Divide dough into 1/2 tablespoon portions and either roll into balls or fill each pastry shell with the mixture.

Transfer to a cookie sheet and bake in 350° F oven for 20 minutes or until lightly browned. While tartlets are still warm, brush the tops with a little more melted maple cream. Serve warm.

Ham, Bacon and/or Sausage could be substituted. Try with cheddar or smoked Gouda in place of the Swis Cheese.

Maple Apple Pie

  • 6 large apples, pared and thinly sliced
  • 1 c. Hall Farms Pure Maple Cream
  • 1/4 tsp. salt
  • 1/4 tsp. cinnamon
  • 1 Tbs. Butter
  • pastry for 2-crust 9" pie

     Preheat oven to 450° F.  Arrange pared and sliced apples in pie plate lined with pastry.  Pour Hall Farms Pure Maple Cream over the top of the slices.  Sprinkle with salt, cinnamon and flour.  Dot with butter.  Cover with top crust.  Brush with milk and bake at 450° F   for 10 min. and then at 350° F for 40 min., or until crust is golden brown.


Maple Dumplings

  • 1/4 Cup Milk
  • tsp. Salt
  • 1 Egg
  • 1 Cup Flour
  • 1 tsp. baking powder
  • Pint (16 oz.) Hall Farms Pure Maple Syrup

     Beat egg and milk together in a small bowl, stir in the dry ingredients. In a 2 quart saucepan bring a pint or more of Hall Farms Pure Maple Syrup to a boil. Drop dough by large tablespoons into the boiling syrup.

     Cook two minutes. Turn dough frequently during cooking. cook over medium heat.) If syrup gets too thick before dumplings are done add more maple syrup or water. (Cook only two or three at a time.)


Maple Whole Wheat Muffins

  • 1 cup white flour
  • 1/2 cup whole wheat flour
  • 2 eggs
  • 2 tsp. baking powder
  • 1/4 tsp. salt (optional)
  • 1/2 cup chopped pecans or walnuts (optional)
  • 1/2 cup milk
  • 1/4 cup oil
  • 3/4 cups Hall Farms Pure Maple Syrup (dark works best)

      Combine eggs, milk, oil, and Hall Farms Pure Maple Syrup. Add dry ingredients and nuts. Mix well. Spoon into greased muffin tins. Bake at 350° F. Cook about 20 minutes. Makes 12 muffins.


Maple Baked Beans

  • 4 cups water
  • 1 pound dried beans
  • 1 Tbs. oil
  • 1 onion, sliced
  • 1 1/2 tsp. salt
  • 1 cup or more Hall Farms Pure Maple Syrup (dark)
  • 1 tsp. dry mustard
  • 1 Tbs. minced fresh ginger root or 1 tsp. powdered ginger
  • slice of salt pork or 2-3 slices of bacon  (optional)

       Simmer beans in 4 cups water for about 2 hours. Drain. Place onions, salt, Hall Farms Pure Maple Syrup, dry mustard, and ginger in bean pot. Add 2 cups water or enough to cover beans. Cover and bake at 350° F for 2 hours, adding water as needed, to keep beans moist.

      After 2 hours, uncover beans and bake another 45 minutes , or until liquid is absorbed. 


Maple Sugar Biscuits

  • 2 cups flour
  • 3 tsps. baking powder
  • 1/2 tsp. salt
  • 1/3 cup shortening
  • 7/8 cup milk (1 cup less 2 tbs.)

       Mix quickly with fork until dough forms a ball.  Knead on lightly floured board 7-8 minutes.  Roll out to 1/2" thickness.  Sprinkle with 1 cup Hall Farms Granulated Maple SugarFold over dough twice and roll to 3/4" thickness.  Cut with 2" cutter. 

       Bake on un-greased baking sheet at 450° F for 12-15 minutes.
