Maine Maple Grades

Checking Syrup


Pure Maine syrup is a nutritious food made by boiling the natural sap of the sugar  maple tree.  As a pure syrup, it provides the consumer with high nutritive values from its many trace minerals, vitamins and amino acids -- the building blocks for protein.  Yet, it only contains 40 calories per tablespoon.

40 Calories
35 mg of Potassium
21 mg of Calcium
Less than 2 mg of Sodium
Traces of Iron, Phosphorous and several B-vitamins


Maine maple syrups are similar to fine wines in that they offer to the consumer a variety of unique natural flavors, which have been defined by Maine Law.  You will find one of the following official table grades marked on each container of Maine Maple Syrup.
  • Grade A Light Amber - Made early in the season when the sap is crystal clear and sugar content is at its highest, Grade A Light Amber is a light-colored syrup with a mild maple flavor. It's the perfect natural sweetener for pancakes, tea, coffee and to use when you're looking for a sweet delicate flavor.
     
  • Grade A Medium Amber - Hall Farms's Grade A Medium Amber has a slightly lower sugar content. We boil the sap longer to get the proper density resulting in a somewhat darker syrup with milk yet slightly stronger maple flavor. This grade is perfect for pancakes, deserts and cereals.
  • Grade A Dark Amber - Hall Farms Grade A Dark Amber is made later in the sugaring season. Now the sugar content in the sap is lower and the sap needs to be boiled even longer to reach the proper density. We use this sap to create a darker syrup with a rich maple flavor. We like this syrup for a stronger more bountiful flavor of maple.
     
  • Grade A Extra Dark - This is made late in the season when the sugar content in the sap is at it lowest and our extra boiling give this the strongest maple flavor of all. It offers a hearty maple flavor and is considered the most popular with chefs because of its robust maple flavor. It is also used for the Master Cleansing Diet.
Maine has a Mandatory Maple Syrup Grading Law.  Maple Inspectors rigidly enforce this law and assist the producer in maintaining the highest quality product.
